Baked Whitefish: Serves 4

1 ½ lbs. filet of whitefish such as sole, whiting, turbot, haddock, halibut or cod
Juice of 1 lemon
1 tbsp. fish sauce
Pinch of cayenne pepper
1 tbsp. snipped fresh herbs
½ tsp. sea salt
1 tbsp. Earth Balance

Place fish in a buttered baking dish. Sprinkle with lemon juice, cayenne, fish sauce, herbs and salt. Dot with Earth Balance. Cover baking dish and bake for about 15 minutes.
