Rib Roast: Serves 6-8

3-rib standing roast, about 5 lbs.
Sea salt
Minced garlic
1 Medium sliced onion
Several toothpicks
Meat thermometer

Set roast in a baking pan on a rack and rub with salt and minced garlic.  Take the sliced onion and place them on different areas of the meat inserted with toothpicks so most of the meat is covered.  Insert meat thermometer into center of the roast. Place in a 400 degree oven. Reduce heat to 350 degrees and bake for 20 minutes per pound or until thermometer indicates meat is medium or medium rare.

Take out of oven and let sit for 10 minutes.  Slice and serve.
